Dairy Free Alfredo…Did I read that right?
Oh, it’s got to be made with Cauliflower, right? Nope.
Does it even taste like Alfredo? Yes, yes it does.
Dairy Free Alfredo Sauce
- 4 Cups Cashew Milk (3/4 C. soaked cashews, rinsed and blended with 4 C. water)
- 2 T. Potato Starch
- 1 T. Salt
- 1 T. Minced Onion
- 1/2 T. Garlic, minced or powder
- 1/2 t. Pepper
- 1/2 t. Italian Seasoning, optional
Pour milk in large sauce pan. Add starch and spices, whisk until combined. Turn heat on to medium high, whisk constantly. Bring to a boil, boil a couple minutes until thickened, and BAMM-O!!
Serve over noodles, rice noodles or vegetables, depending on other food sensitivities! Add chicken and/or veggies. Due to my many food sensitivities I usually have it over a bed of stir fry veggies from Costco.
It’s amazing how a recipe that gives you back a little bit of ‘normal’ can become a beacon of hope and comfort. I hope this recipe restores a little bit of hope that you’ll be okay, even without dairy, gluten, corn, rice, or anything else. Sorry to those with cashew allergies!
